This is the Big Ideas Series, the first set of releases from the brewery. The beers are all unfined, vegan friendly and conditioned in package: bottle, keg and cask. We love our beers and hope you do too... let us know! 

In this contemporary take on the classic Scottish 80 Shilling style the malts work together to provide a luscious combination of toffee sweetness and soft, smooth honey coated raisins, with spruce tips and restrained hops contributing a subtle pine-citrus edge. Wood-panelled bar rooms are evoked, this beer is about everyday opulence; polished but superbly drinkable.

Tasting Notes
Toffee, fresh-baked bread and apple crumble on the nose and an inviting silky mouthfeel encourage a generous first sip. A velvet smooth concoction of raisins, dates and caramel pair with subtle resin citrus and drying tannin from the spruce, along with just enough rounded hop bitterness to ensure a clean, crisp finish.


What The Hell Was I Thinking?
The classic Scottish Export, or 80 Shilling, is another of those annoyingly under represented styles. They’re seen more often north of the border of course, but even then it’s often not a drinking experience worthy of the proud heritage. And unlike pale ales, IPAs, stouts, porters etc, there’s pretty much zero innovation around this style. It’s an 80. Drink it, move on.

Spruce tips are a beautiful ingredient to brew with, imparting a delicate pine citrus that goes perfectly with malt and hops, and seemed like the ideal way to give the Scottish Export at least a hint of something new and different. I learned that less is more though - an early trial with a heavy-handed dose of both the spruce tips and the darker malts came out tasting remarkably similar to Coca Cola. That recipe is filed away for future reference…
